Gluten Free Dairy Free
Snickerdoodles done right!When the holiday season came along I was starting to get the itch for something sweet and traditional. Now, Snickerdoodles have not always been my favorite cookie but I was really feeling the need to try and bake them gluten free for me and dairy free for my 1 year old. So I was off on a mission! The results are tasty and met my need for something sweet without all the added sugar! Win/ win I say!
2 cups Almond Flour
⅓ teaspoon baking soda
1 tablespoon cinnamon
2 tablespoons melted butter or coconut oil
¼ cup honey or maple syrup
1 tablespoon GF vanilla extract
Topping¼ cup coconut sugar
1 teaspoon cinnamon
Preheat oven to 350F. Mix all the ingredients in a bowl. Mix ¼ cup coconut sugar with 1 teaspoon cinnamon in separate bowl. With clean hands make dough into 12 even sized balls. Roll each ball in sugar and cinnamon mixture. Then place on parchment paper and flatten gentally or desired shape. Place tray in oven for 15 minutes . Remove from oven let cool. They will me soft on the inside and slightly chewy on the outside. ENJOY!
