Finding Balance with Dori Ann GF DF Vegan Chickpea Tacos The Real Pantry Edition As I am diving into my creative mind, I am looking to make some knock your socks of type dishes out the these Real Food Seasoning by The Real Pantry. Then it comes to me Tacos. Well I guess I already knew that it would be something in that category because it is a Taco seasoning. But, Let's be real…. Who doesn’t like tacos? Chickpea Tacos are one of my favorite tacos to make. I like to make sure I make at least one meatless meal a week and these tacos fit the bill! But, I had not had it with The Real Pantry’s Taco Seasoning before. I also, wanted to create a special sauce to replace the sour cream part of tacos I so desperately love. And, I have to tell you, I did just that! This recipe was taste tested and approved by six children under the age of 8 and two adults (me and my husband) and got all thumbs. One of the kids even asked to have it for lunch again tomorrow. So I call this recipe a WIN! Ingredients: 1-2 cans of organic chickpeas 5 tablespoons The Real Pantry’s Taco Seasoning 1 tablespoon The Real Pantry’s French Onion Seasoning 1 cup unsweetened cashew milk 3 tablespoons coconut cream 1 pack corn tortilla 1 avocado sliced 1 head of red cabbage shredded Instructions Chickpea: Drain chickpeas and save small about of liquid for later. Place chickpeas in pan and sprinkle with 3 tablespoons taco seasoning. Heat on medium until hot. Sauce: In bowl or blender add cashew milk, coconut cream, 1 tablespoon taco seasoning and 1 tablespoon french onion seasoning and the saved chickpea liquid. Mix until well combined. Adjust seasonings to taste. Place chickpeas, avocado and shredded cabbage on warm tortilla and drizzle with sauce. ENJOY! Gluten Free, Dairy Free, Vegan
