GF DF Lemon-Herb Baked Cod (Gluten Free, Dairy Free)
The Real Pantry Edition
Lemon-Herb is one of my all time favorite seasoning blends. I could sprinkle it on just about anything I make and it is good! But, I had not tried it on Cod. So, I am a licensed daycare provider during the week and these wonderful children get to be my taste testers on anything new recipe I create. Yesterday, they tried the Chickpea Tacos with the special sauce and I was ask for an encore. Today, I made this recipe and I got a standing ovation. There was not one piece of cod left in this house and they were still clambering for more! Super simple but, oh so, good!
2- thawed Cod stakes
4 tablespoons extra virgin olive oil
1 tablespoon The Real Pantry Lemon-Herb seasoning
Preheat oven to 400F. Place cod in glass baking pan. Drizzle with EVOO and sprinkle with Lemon-Herb. Place in the oven for 15-20 minutes. Remove from oven and serve with quinoa and mixed vegetables. ENJOY!
