Garlic Mashed Beet Potatoes
As much as I hate to admit it, I was not always a beet fan! Beets are one of those vegetables that didn’t make the table when I was growing up. When I started my journey to healthy living beets came up several times as beneficial, but I struggled to wrap my head around eating them. I started hiding them in different foods so i would get the benefits from them without having to taste them.
I have since grown to love the taste of beets but still enjoy hiding them in my recipes for my children. This recipe came along one day when I was trying to figure out how to get more nutrients into my younger son’s diet. They turned out wonderfully and he loved them!
Ingredients5 red potatoes chopped
2 fresh beets chopped (1 can unsweetened beets will work)
2 cloves of garlic minced (Pre-minced will work)
1 handful fresh spinach :frozen will work)
2 tablespoons olive oil
Pinch of salt
Salt and pepper
Instructions Place all ingredients in large cast iron cooking pot, fill with water until covering all ingredients. Simmer on medium for 30 minutes or until beets and potatoes are soft. Drain water saving ¼ cup for later. Mash the veggies with potato masher until well combined. Add water you saved as needed. If you would like it more creamy you can add cream, milk or milk alternative.
